Wake-Up Warm-Up Egg & Avocado Toast

Scrambled egg and avocado toast drizzled with Killjoy's Hot Honey

Every good session starts with a warm-up. This is the breakfast we make before training: soft scrambled eggs, smashed avocado, and a ribbon of hot honey over the top. It takes ten minutes and tastes like you tried a lot harder.

Yield: 2 toasts | Prep: 5 min | Cook: 5 min | Total: 10 min

Ingredients

  • 2 thick slices of your favorite bread

  • 1 ripe avocado

  • Juice of 1/2 lemon

  • 3 large eggs

  • 1 tablespoon butter

  • Salt and black pepper

  • 2 to 3 teaspoons Killjoy's Hot Honey

  • Optional: crumbled feta, sliced cherry tomatoes, or fresh herbs

Steps

  1. Toast the bread until the edges are crisp.

  2. Mash the avocado with the lemon juice and a pinch of salt. Spread it over the toast.

  3. Whisk the eggs with a pinch of salt. Melt the butter in a nonstick pan over medium-low heat, add the eggs, and stir slowly until they are just set and still glossy.

  4. Pile the eggs on the avocado toast.

  5. Drizzle hot honey over each toast, crack some pepper on top, and add any extras.

Killjoy's Tip: Pull the eggs off the heat a few seconds early. They keep cooking on the toast.

Shop the honey: Made with Killjoy's Hot Honey. Grab a bottle in the shop.

Do not feed honey to infants under 1 year of age.
