The Uncrustable Guard: Hot Honey Ricotta Pockets

Hot honey ricotta Uncrustable-style sandwich with Killjoy's Hot Honey

Every good guard has one job: keep everything sealed in. This one locks creamy ricotta and Killjoy’s Hot Honey inside soft, crimped bread, the homemade, grown-up version of the lunchbox classic. We made a platter of these last October and they disappeared before the first round was over.

Yield: 4 pockets | Prep: 10 min | Total: 10 min

Ingredients

  • 8 slices soft sandwich bread

  • ½ cup whole milk ricotta

  • 4 to 8 teaspoons Killjoy’s Hot Honey, plus more for drizzling

  • A pinch of flaky sea salt (we love Maldon)

Tools: a wide drinking glass or round cutter about 3 ½ inches across, and a fork.

Steps

  1. Lay out 4 slices of bread. Spoon about 2 tablespoons of ricotta into the center of each, leaving a clear border so it can seal.

  2. Make a small well in the ricotta and add 1 to 2 teaspoons of hot honey. Sprinkle a pinch of flaky salt in the middle too. That’s the secret.

  3. Top each with a second slice of bread. Press the glass or cutter down firmly around the filling to cut and seal a round pocket.

  4. Crimp the edges all the way around with a fork so nothing escapes.

  5. Drizzle a little more hot honey on top and serve. For a platter, stack them with fresh fruit, nuts, and a small bowl of hot honey for dunking.

Make it a main event: add a thin smear of fig or raspberry jam with the ricotta, or tuck in a slice of prosciutto.

Killjoy’s Tip: Keep the filling in the center and the edges dry. A clean border is what makes the seal hold, just like a tight guard.
