Open guard means you are ready for anything. Open shells mean dinner is ready. These grilled oysters get a spoonful of lemony hot honey butter that melts into the shell while they cook. Serve them straight off the grill with extra lemon.
Yield: 12 oysters | Prep: 10 min | Cook: 5 min | Total: 15 min
Ingredients
12 fresh oysters, scrubbed and shucked, left on the half shell
4 tablespoons butter, softened
1 tablespoon Killjoy's Hot Honey
1 small garlic clove, grated
Zest of 1 lemon, plus lemon wedges to serve
1 tablespoon chopped parsley or chives
Pinch of salt
Steps
Heat a grill to medium-high, about 450°F.
Stir the butter, hot honey, garlic, lemon zest, herbs, and salt together.
Set the oysters on the grill in their shells. Nest them in crumpled foil if they wobble.
Add about 1 teaspoon of the butter to each oyster. Close the lid and grill 3 to 5 minutes, until the butter bubbles and the edges of the oysters curl.
Move to a platter with tongs, squeeze lemon over the top, and serve right away.
Killjoy's Tip: Shells stay very hot. Serve them on a tray of coarse salt or crumpled foil so they sit flat.
Shop the honey: Made with Killjoy’s Hot Honey. Grab a bottle in the shop.
Do not feed honey to infants under 1 year of age.
